Quinoa Salad



1 – 1/2 cups quinoa

1 cucumber, diced

1 – 2 green onions

a handful of parsley

1-2 tomatoes

2 tbsp pine nuts

Olive oil

Lemon juice

Boil the quinoa in salted water and drain it. Toast the pine nuts in a pan for 4-5 minutes. Add the quinoa to the pine nuts and stir well. Transfer the mix to a large bowl and add the diced cucumber, green onions, parsley , tomatoes, olive oil and lemon juice. Don’t forget to season with salt, pepper and, maybe, cumin for a little twist.
